In a heavy pan, mix sugar, butter and water. Cook and stir 8 to 10 minutes until mixture turns brown. Add pecans and vanilla. Pour mixture into buttered sheet pan. Top with chocolate, smoothing chocolate as it melts. Let cool then break into pieces. Store in an airtight container.
