I double this recipe because everyone in our family loves them. They are easy to reheat in the microwave and you can sear them in the pan when you cook eggs.

Heat a large cast-iron skillet over medium high heat.
Place the ground pork in a large bowl and gently fold in the maple syrup, sage, thyme, rosemary, cayenne pepper, nutmeg, sea salt, and black pepper with a spoon. Divide the sausage into eight equal portions.
Once the pan has preheated, add the olive oil. Shape the portions in the patties between your palms in place in a pan. Cook for eight minutes on one side, then flip the patties and continue cooking until no longer pink in the middle, about five minutes. Serve, warm, or let cool completely before freezing.
You can adjust the seasonings according to preference. We double the recipe and freeze it for up a month.
