Honey-Lime Salmon with Butter Sauce
Combine flour and lime zest. Sprinkle on one side of each fillet. Rub in with fingertips. Drizzle with honey. Place flour and honey side down in skillet heated with oil. Cook in batches, being careful not to crowd the pan. While cooking, carefully coat other side with flour mix and drizzle with honey. Cook 3 - 5 min per side, until browned. Serve with browned butter sauce.
Sauce: Cook butter over med heat in saucepan, swirling often, until golden brown. Remove from heat adn add garlic, lime juice, and salt and pepper to taste. Serve over salmon.
