Black Eyed Peas, Ham, Brown Rice and a generous amount of vegetables combine for the perfect New Year's Day meal.
In a pressure cooker, sauté the bell pepper, onion, celery and jalapeño in the olive oil over medium heat for about 5 minutes, until onions are translucent. Add the garlic and ham and stir well to combine. Add the spices and the black eyed peas, and pour 4 cups of chicken broth and3 cups of water over the top. Close the pressure cooker and bring up to pressure, cook 11 minutes and then allow the pressure to release naturally.
Meanwhile, in a separate saucepan with a tight fitting lid, combine the brown rice with 3 cups of chicken stock, 3 cups of water, and the butter. Bring to a boil and then reduce the heat to low and simmer 50 minutes. Remove from heat and let stand 10 minutes; fluff with a fork.
To serve, scoop rice into a bowl, top with black eyed peas, and top with green onions. Other good toppings include fresh chopped tomatoes, avocado, or a little smoky cheese.
Black eyed peas are thin skinned legumes that don't need to be soaked overnight. If you do soak them, reduce the cooking time by a couple of minutes and use a quick release to avoid them getting mushy. If you like a little additional salt, you can use all chicken broth. Or to cut the sodium way down, replace the chicken broth in the pea pot with 6 cups of water and 1 cup of white wine, and use all water in the rice.
