Souffle-like pudding
Preheat oven to 200 degrees. Lightly grease 4 ramekins or heat proof cups.
Melt chocolate
Whisk egg yolks and caster sugar until frothy. Mix in the chocolate, then beat in brandy and 2 tblspns very hot water.
Whisk egg whites in a clean, dry bowl with electric beaters until soft peaks form. Fold a little of whites into the mousse to slacken it then carefully fold in the remainder. Mix until there are no streaks or pockets of egg white.
Gently pour the mixture into prepared ramekins. Place ramekins on a baking tray and bake for 7-8 minutes, or until risen slightly but still soft in the centre.
Can be prepared up to 24 hours in advance. Cover with plastic wrap and refrigerate until needed.
For a real treat make a hole in top of cooked puddings for a small scoop of ice cream.
