Sweet with a bit of bitterness, and as seductive as the taste of love, that's caramel - a magical delicacy from poetic France.
Step 1: Cook the caramel
Put 70 g of sugar and 50 ml of water in a pot, and cook on low heat until the sugar thickens and turns honey color.
Quickly pour the sugar into the caramel mold, and wait for the sugar to solidify.
Step 2: Prepare custard mixture
Gently beat 2 eggs, 4 egg yolks, and vanilla.
Heat milk and 60g sugar until the sugar has dissolved, the milk is warm about 60-70 degrees Celsius.
Slowly pour the milk into the egg mixture, whisking gently as you pour.
Strain the mixture through a sieve.
Pour the custard mixture into the mold.
Place the caramel mold on a deep baking tray.
Step 3: Bake in the water bath
Preheat oven to 150 degrees Celsius for 15 minutes.
Pour boiling water into the baking tray so that it is 1/3-1/2 of the height of the caramel pan.
Bake the caramel for about 30 minutes.
Step 4: Done
Remove caramel from oven, and let cool to room temperature.
Store the caramel in the refrigerator for at least 6 hours before serving.
