to choose to buy fresh chicken eggs
When choosing to buy chicken eggs, you should observe the color of the eggshell, should choose the ones with dark skin, no tiny black spots on the surface of the shell.
Normally, the surface of the eggs will be slightly rough, when shaken lightly, you will not hear the egg moving.
On the contrary, do not choose eggs with pale color, smooth egg surface, when shaking, you can hear the sound of eggs moving inside because these are eggs that have been stored for a long time and may have been damaged.
How to make 3 flavors mini sponge cake with air fryer
first
Beat egg yolks and whites
Using 2 eggs, separate the yolk and white into 2 different bowls.
With the egg whites, use a hand whisk to beat the egg whites until large bubbles appear. Then add 1 tablespoon of lemon juice and continue to beat with a spatula for 1 minute.
Next, add 1 tablespoon of sugar. Beat the whites and sugar continuously for about 10-15 minutes, then add the rest of the sugar. Continue whisking until the whisk is lifted and the whites form a vertical peak.
Gently stir the egg yolks. Strain the egg yolks through a sieve to make the cake mixture smoother.
Next, sift 30g of flour and 1/2 teaspoon of salt into the bowl of egg yolks, stir until the yolks and flour blend together to form a smooth paste.

Prepare the cake mold, spread a little cooking oil inside the mold. If you have stencils or cupcake pans to line them with, there's no need to grease them.
In turn, put the flour mixture into each cake mold, decorate with some raisins (or nuts, dried jam depending on your preference) on top.
Note: Only about 1/2 full of the dough to give the cake space to expand when baking!
Preheat the air fryer for 10 minutes at 150 degrees Celsius. Then place the cake molds in the pot one by one, bake the cakes at 130 degrees Celsius for 15 minutes.
After baking for enough time, check that the cake is done by inserting a toothpick into the cake, if the mixture does not stick to the toothpick, the cake is done.
