500g all purpose flour in a bowl
warm water and yeast together, let the yeast activate
mix together, knead till smooth
let the dough rest for 18 minutes
continue kneading for a little bit, till nice and smooth
then add about a tsp of oil to bowl, let the dough rise for 1.5 hours
cut up some scallions and cook them in oil till fragrant and colored
put in a separate bowl to let it cool off
after done rising, knead the dough again till smooth.
roll into flat rectangle, not too flat though. if it's too hard, let it rest again for 15 minutes, then roll again.
after it's in sheet form, add the salty scallion oil and scallions, spread throughout the surface.
fold it so that it's three layers
put a bit of oil on top layer
cut small, then slightly bigger strip
stack the strips one on the other
chopstick in middle, from the long end, and press
stretch it out a little bit, and turn it upside down
chopstick in middle, short end, folding the long end in half
double twist with chopstick,
and press down to make a hemisphere type shape
let it rise again for 1 hour
steam 15 minutes
let all the steam escape, and remove lid
