Blended soup made with veggies and garbanzo beans
Make the hummus first by adding the garbanzo beans, garlic, olive oil, tahini, apple cider vinegar to a food processor and process until smooth. Set aside.
Sauté carrot, celery, and onion in butter.
Add sautéed vegetables and chicken broth to blender and blend until smooth. Add in hummus and blend until smooth. Add more chicken broth to thin if needed.
Top with fresh chopped cilantro.
A vitamix blender gets the best smoothness.
