eggs and bacon in potato bowls
Lay baked potato on its side and use knife to cut off top 1/3 of potato. Hollow out the middle to make a bowl leave potato as thick or thin as you wish. Place 1/2 tablespoon butter in middle of each bowl. Gently break egg into bowl and add bacon, cheese, parsley and salt and pepper.
Bake 350 degrees for 25 minutes until egg whites or set.
