These cakes are delicious with chutney and as a side with an Indian meal.
Soak urad dhal in warm water in one pot. Soak rice in warm water in a separate pot. Both should soak for 3 to 4 hours uncovered. Place the urad dhal and the rice into a warmed oven if it is winter (Turn the oven to 250 degrees for 15 to 20 minutes. Shut off the oven.) Grind in a contents of both pots in a pot until the grains are slightly coarse. Pour into a bowl. Salt to taste. Cover and let stand overnight in a warm place. Turn the oven to 250 degrees for 15 to 20 minutes. Shut off the oven. Put the idly mixture into the oven. In the morning, the mixture should have risen.
In the winter, it is not unusual that the mixture didn't rise. If it still didn't rise even though you let the idly sit in a warmed oven. Take the idly out of the oven, and turn on the oven to 250 degrees for 15 to 20 minutes. Shut off the oven. Put the idly mixture in a covered dish on a cookie sheet into the oven. It should rise and be thick and frothy.
Drop idly batter into lightly buttered cups of the stainless steal idly maker. Place the trays of idly into the idly maker pot. Make sure that water is at the bottom of the pot. The water should not cover the lowest tray though. Steam the idly. The maker will whistle. It should take about 5 minutes to steam the idly. The idly should be soft and leave no indentation when touched. Make sure that the water does not completely evaporate.
Wait a minute before removing the idly trays to avoid a steam burn. The idly will easily remove with a spoon.
To re-heat idly, place idly in a lightly buttered baking dish. Sprinkle a little water on them and cover. Place in an oven for a few minutes or in a microwave.
These freeze well.
