Set oven at 180 degrees Celsius, lightly grease a 25.5 cm pie dish or flan dish. Place all ingredients into a food processor or liquidiser and process until smooth. (Alternatively. Cream the butter, sugar and vanilla, add coconut and eggs. Sieve flour with nutmeg and fold into coconut mixture. Gradually whisk in milk.) Pour into prepared dish and bake 1 hour.
Serve pie hot or cold with whipped cream or custard.
When cooked you will find that the mixture has formed a pastry shell, an egg crust and filling, and a coconut topping.
