Suggest a better description1. Heat oil in large skillet med-high heat. Pat filets dry then seat 1-2 minutes per side. Transfer to paper towel lines plate and chill 30-60 minutes until cold. Like baking sheet with parchment paper and set aside.
2. Blend mushrooms in food processor until finely minced. Melt butter in skillet medium heat. Add mushrooms, shallots, garlic, thyme, salt and pepper. Cool 3-5 minutes then transfer to bowl and cool completely.
3. On lightly floured surface roll out puff pastry into 13 inch square and cut into 4 equal squares.
4. Add 1 tablespoon Gorgonzola cheese to center or each and top with 1/4 of mushroom mixture. Place chilled filet on top and press down.
5. Wrap 2 opposite corners of pastry over filet overlapping edges. Seal with egg wash. Wrap remaining corners. Place seam side down on baking sheet. Loosely cover wellingtons and keep remaining egg wash and chill 30-60 minutes.
6. Preheat 425. Brush wellingtons with remaining egg wash bake 18-25 minutes or to 130 degrees. Transfer to wire rack and rest 5-10 minutes
7. Serve with creamy thyme sauce.
1/4 cup vegetable broth
1 1/2 teaspoon sugar
1 tablespoon Dijon mustard
1/4 cup sour cream
1 tablespoon fresh thyme, chopped
1/2 teaspoon salt
1 tablespoon cornstarch
1. Saucepan, heat broth and sugar medium high heat until sugar dissolves.
2. Reduce heat to low and add remaining ingredients.
3. Alllow to simmer over low 3-5 minutes, stir occasionally until thickened.
