coat meat with oil, season with sale and pepper
set instant pot to sautee
Sear pork for a bit of color
add a bit more oil to pot, throw in large diced onion
soften onions
add a bit more oil
add 6 cloved diced garlic
add Apple Cider vinegar and deglaze pan
Turn off instant pot
re-add beef to pot
Add Salt/Pepper, cumin, coriander, and Oregano to blender
Add fire roasted diced tomatoes
Add adobo sauce/chipotle chilies
Blend till smooth
Add sauce to pot
Set Instant pot to high for 50 mins
