Mix cormeal, 2 1/2 cups water and 1/4 t salt in a glass bowl. Cover with plastic and microwave on high for 12-14 minutes. Whisking every 3 minutes until thick.
Sprinkle salt and pepper on both sides of steak.
Heat 2 tsp oil in lg skillet and the sage and rosemary. Cook steaks for 2-3 minutes per side or until they are browned and cooked to med. Remove to a platter and cover with foil.
Heat remaining oil in same skillet and saute onion and peppers for about 4 minutes. Add garlic and cook for 1 min more.
Stir in the tomatoes and their juices, 1/4 c water and salt and pepper. Simmer 5 minutes.
Whisk parmesan into the polenta. Spoon veg and sauce over steak and serve with polenta.
