A lighter version of Italian Wedding Soup
1. Brown sausage, drain fat and break into crumbles. Set aside.
2. Saute green onions and garlic in 2 tablespoons of olive oil.
3. Heat broth and add pasta.
4. Cook pasta for 5 minutes, add spinach. Add more broth or water if needed.
6. Cook 3 minutes more. Add chopped tomato and sausage. Simmer for an additional 2 minutes and serve.
Traditional Wedding Soup uses tiny meatballs, but I find using a strongly flavored sausage lets me use less meat and provides less calories from bread and cheese fillers used with meatballs.
You can also use 1 (10-oz) packagefrozen chopped spinach; thawed and drained instead of fresh.
