Spicy tater tot casserole with chili beans and jalapenos
Mix eggs, soup and milk in a small bowl and set aside.
Drain chili beans and spread in a layer at the bottom of a 13" x 9" casserole pan.
Spread 2 cups of shredded cheese over the top of the beans for the next layer. Combine onions, jalapenos and tomatoes, then spread over the cheese.
Pour soup, egg and milk mixture over the vegetables.
Top with frozen tater tots - cover as much as possible with a single layer of tots.
Bake at 375 for one hour. With five minutes remaining, spread the final cup of shredded cheese over the top.
