Suggest a better descriptionIn a large saucepan or stock pot, stir fry the meat until brown and tender.
Add garlic, onions, and carrots to the pot and continue stir frying for 5-10 minutes, or until vegetables begin to become tender.
Add beef broth (enough to cover all the vegetables easily, but not much more than that) and bring to a boil, then simmer for 15min.
Dissolve curry roux in a small amount of hot water, and stir until smooth and creamy.
Stir dissolved roux into the pot , and keep simmering over low heat for 5-10 min.
Serve over rice, with optional dried garlic flakes as a garnish.
