From the "Quick and Easy Indian Cooking" cookbook
1. Scrub the potatoes and put them in a saucepan.
2. Fill with water that comes 2 inches above the potatoes
3. Put 1 tsp of salt in the water.
4. Cover and boil potatoes till they are just tender.
5. Drain, peel and chop.
6. Put oil in a large frying pan and set over medium-high heat.
7. When the oil is hot put in the cumin seeds. Let them sizzle for a few seconds.
8. Put in the potatoes and brown lightly on both sides (about 10 minutes).
9. Add the salt, ground cumin, garam masala and cayenne pepper and mix well.
10. Cook stirring constantly for another few minutes.
Garnish with cilantro and serve.
