First oven baking helps get the cooking going. Finishing on the grill just makes them perfect
Preheat oven to 350. Combine first 5 ingredients in a small bowl. Place each rack of ribs on a double layer of aluminum foil. Sprinkle ribs with rub. Wrap racks individually and divide between 2 baking sheets.
Bake ribs until very tender but not falling apart, about 2 hours for baby backs and 3 hours for spareribs. Carefully unwrap and pour any juices into a measuring cup, reserve.
Place ribs in fridge for up to 3 days (flavor develops more as they sit). Cover and save the juice as well.
Heat grill. Add reserved juice to bbq sauce to make 1 1/2 cups. Whisk. Grill ribs, basting frequently with sauce and turning frequently, about 10 minutes.
