Great appetizer
Mix chopped celery with chicken, 1 cup cracker crumbs, and 3 tbsp. hot sauce. Roll into 24 balls.
Mix remaining hot sauce and butter in shallow bowl. Place remaining cracker crumbs in separate bowl. Roll chicken balls into hot sauce mixture, then crumbs until coated evenly.
Heat oil in large skillet. Cook chicken balls 3-4 minutes in batches, until lightly browned, turning after 2 min. Drain on paper towels. Place in 15x10 pan sprayed with cooking spray.
Bake 20-25 minutes until done.
