Simple pudding and really great. Yes use 4 cups of diced rhubarb.
Whisk eggs, sugar, flour and vanilla together.
Mix in diced rhubarb, all 4 cups, it is not too sharp :)
Bake in 1.5 quart baking dish at 350 for 40 minutes or until firm. This may take longer.
Try to not eat the whole thing.......fail miserably.
Try this in a shallow dish as I used a Corning ware round dish the fist time and the middle was still wet. I'm trying it in a 8 by 8 Pyrex next time.
