Squeeze out some of the moisture in the grated potatoes. Add onion, egg, flour and salt. Beat until well blended.
Put 1/2 inch of oil in the skillet. Drop batter by heaping tablespoonfuls into hot fat and fry until crisp and brown on both sides.
Remove pancakes and drain on absorbent paper. Serve hot with sour cream, hot applesauce, cream cheese or apricot or prune puree, if desired.

ReverendKen 1y agoThis was great, I had only ever eaten latkes, never known how to make them, but for me the addition of garlic, and finely chopped Serano peppers, plus some red pepper, brought out a killer flavor, served them with sour cream blended with a touch of salsa, it was a kick for sure.

DestinyCooks 3y agoMy little boy & I love these & he's not a big fan of potatoes. He didn't know what they were. Even liked them with apple sauce
Fruitveggirl 3y agoI made some edits to this recipe. I used half an onion (grated -- not chopped). I also used some baking powder. This was a huge success! Even my most finicky eater loved it!
Jumccaff 3y agoVery good. Used a food processor on the potatoes
