Beef kebabs with a roasted tomato sauce and pomegranate molasses
Place tomatoes (and juice), chopped yellow onion, 3 cups of parsley leaves and pomegranate molasses to food processor. Pulse until sauce is smooth. Set aside.
Mix ground beef, 1 cup chopped parsley, white onion, salt and pepper in a bowl. Shape beef mixture into oblong kebabs - about 2 tablespoons each. Place kebabs on a plate until ready to cook.
Coat skillet with non-stick spray. Heat pan over medium high heat. Cook kebabs, gently turning every few minutes until nicely browned and no longer pink inside - about 10 minutes.
Serve kebabs with sauce and topped with pomegranate arils. Serve with naan.
