For 10lbs of meat take 1 lb (about 2 cups) of brine dissolve in hot water then add enough cold water to float an egg.
1lb meat, add a little over 1/4cup brine. Heat up mug with hot water, dissolve brine and let it cool.. Test to see if the egg floats. If it doesn't, add ice cubes or cold water until it barely floats.
