For the filling:
1. In a large cast-iron skillet over medium-high heat, heat the oil. Add the celery and the ground beef and cook, breaking up the beef, until the beef is browned.
2. Add the bacon, eggs, chili powder, cumin, oregano, onion powder, salt and pepper and mix throughly.
3. Spread the mixture evenly in the pan and set aside.
For the Cauliflower:
4. Fill a large pot with water and bring to a boil over high heat. Add the cauliflower and cook until tender, 5-7 min.
5. Drain and roughly mash the cauliflower with a potato masher or an electric hand mixture.
6. Add the cream and butter and continue mashing until smooth and creamy. Season with salt and pepper to taste.
7. Spread the cauliflower mash over the ground beef mixture. Sprinkle the shredded cheese over the cauliflower.
8. Bake for 20-25 min, until the cheese is melted and bubbly.
Serve hot with optional toppings on the side e.g. cilantro.
