Basic recipe from Moosewood but I have modified based on what Audrey and I like. Audrey likes with more pasta so for this recipe try 16 noodle instead of 12. This adds another layer.
Preheat oven to 375F.
Cook the lasagna noodles according to the package. Should be rubbery but not mushy. They will cook more in the casserole.
In a very large saucepan heat to medium and add oil, onions, garlic and oregano.
When onions start to get a tiny bit translucent add spinach and mushrooms.
You will have a big pile of stuff but do not worry it will cook down.
Reduce heat and cover. Let spinach and mushrooms release their juices.
In two minutes lift the lid and stir well. Cover again. In two more minutes lift the lid again and stir. At this point you can leave the lid off and sauté as usual.
Cook until the mix is wilted and about 1/3 the volume. Until most of the liquid is cooked off but mix is not dry. Remove from heat.
In a large mixing bowl combine mozzarella, ricotta, eggs, parsley and a little salt and pepper.
Layer the 9 X 13 baking dish. Start with enough sauce to cover the bottom of the dish. Then a layer of noodles. Then 1/2 of the ricotta mix. Then 1/2 of the spinach. Then 1/3 remaining sauce. Then noodles. etc. Put a little sauce on the top layer of noodles and sprinkle with parmesan cheese.
Bake covered for 30 minutes @ 375F.
Uncover and bake for 15 minutes more.
Let rest 15 minutes and serve.
