Rinse under cold running water.
Cook the leek in a large pot of salted boiling water, until leek are tender. Drain.
Heat the oil in a large skillet, add the leek and cook 5 minutes.
Stir in remaining ingredients, cover and heat through.
Transfer to platter with liquid on top.
