Puff pastry tart that can be served hot or cold, as a side or main course.

1. Preheat oven to 400 F. Line a baking sheet with parchment paper.
2. In a small bowl, combine egg and water, whisking with a fork until smooth. Set aside.
3. In another bowl, mix cheese and cream, whisk to combine. Set aside.
4. On a lightly floured work surface, roll out puff pastry to a 10"x10" square. Trim a 1/2" strip from each side. Place square on baking sheet and using a pastry brush, brush the edges of the dough with some egg mixture. Place strips of dough along edges of crust and press lightly to adhere. Brush edges of dough with egg mixture.
5. Spread a layer of cheese mixture within the borders of the pastry and top with a thick layer of leeks.
6. Bake for 35 min or until dough is golden brown. Let cool for 10 min.
7. Sprinkle with parsley and cut into squares.
