Leg of Lamb with Roasted Garlic
garlic:
Trim head tops and wrap in foil, creating pouch.
Drizzle with olive oil and seal pouches.
Arrange on baking pan and place in oven for last 45 minutes of lamb roasting.
lamb:
Open roast and arrange, cut side down, in oiled roasting pan.
Insert garlic sliced throughout the roast.
Coat with oil and sprinkle with herbs.
Roast 425 on bottom oven rack for 15 minutes.
Reduce to 350, continue roasting 1-1 1/2 hour and roast temp 125 for rare.
