Winter chicken casserole with seasonal lemons. Gluten free.
Preheat the oven to 180degC. Heat the olive oil in a large frypan over a medium-high heat. Add the chicken pieces and sauté them for 8-10minutes, or until they are well browned on all sides. Remove the chicken from the pan and place it in a casserole dish.
Reduce the heat to medium-low and low and add the onion, garlic, bay leaves, rosemary and sage to the pan. Cook the mixture for 3-4 minutes until the onion has softened. Add the lemon juice and zest, sherry and chicken stock and bring to the boil. Season then pour over the chicken in the casserole dish.
Cover and bake for 1 hour, or until the chicken is tender. Serve with crusty bread to soak up the juices and a green salad.
