Place cashews in a food processor and process to a fine powder. Add lemon juice, lemon zest, coconut, and dates and process until consistency is thick and moist, adding a bit of water if needed.
Using hands, roll into small bite-size balls and then roll into some extra shredded coconut to coat the ball. Place into a container and put it in the refrigerator or freezer until hard.
Makes about 30 balls.
