Beat egg whites and 1 tbsp sugar until stiff, set aside. Combine sugar, flour, butter, dessicated coconut, almond meal, baking soda and baking powder. Beat in egg yolks, lime juice and coconut milk. Fold in egg whites and pour into a greased pudding mold. Cover and place in pan of hot water and bake at 350 degrees (180 C) for 1 1/4 hours. Invert onto a plate to serve
