Wet two edges, pinch tightly into triangle, wet one corner and pinch tightly other corner
Leave three folded pasta strips for testing
Simmer in hot salted water until pasta strips have very little to no bite. Do not overcook!
Sauce
Simmer all ingredients until it has a sauce consistency. Season with salt and pepper
Toss cooked tortolloni in sauce and serve with cheese
