Low fat brownies made using extra light mayonnaise instead of butter or oil.
Set the oven to 180 degrees centigrade.
Boil a saucepan full of water, then set a large bowl on top of it and melt the dark chocolate pieces in it.
While the chocolate is melting, oil and base line a 19X19cm square tin with baking parchment.
Measure into a small bowl the flour, coco powder and bicarbonate of soda and mix so all the ingredients are evenly combined with a fork.
Once the chocolate has melted, mix in the coffee granules, all the sugar, buttermilk substitute and the vanilla extract using a fork and stir until all ingredients are well combined.
Add the egg into the chocolate mix and beat it in thoroughly using the fork, then mix in the mayonnaise stirring until the chocolate mix is nice and glossy.
Add the flour mix into the chocolate mix and using a whisk, beat it together until all the ingredients are well combined.
Pour all of the mix into the prepared tin and then place it into the middle of the preheated oven.
Leave it in the oven for 30 minutes to cook.
After 30 minutes take the tin out of the oven and then leave it on the side for 10 minutes to cool.
Once the brownies have cooled, take it out of the tin and then cut it into 12 squares.
You can stop the knife sticking and mashing up the brownies by spraying both sides of it with cooking spray before you make the first cut.
