Mix the coconut with the sugar, flour, vanilla and beaten egg whites. Use powdered vanilla if you have it.
Put in a WELL SPRAYED - (you can''''t use enough spray) muffin tin. Form then into the shape of a pie shell with room to fill. Bake at 380 degrees in the middle of the oven for 16 minutes. Immediately remove from the muffin tin to cool.
Fill with whatever you want. Debbie used lemon curd with mascapone cream topped with a fresh raspberry.
