Pop 1 cup popcorn, place in roaster pan. Remove all un-popped kernels on bottom of pan. Mix together in 3-quart saucepan (or larger) the brown sugar, butter, syrup and salt. Bring to boil and boil for 5 minutes, stirring occasionally. Then whisk in until frothy the vanilla and baking soda. Pour over popcorn in roaster. Stir until well coated (I usually need someone to help me hold the pan while I stir). Bake at 250 for one hour, stirring every 15 minutes. Pour onto waxed paper, or other clean pans. Stir as it cools to avoid one big popcorn ball.
