COMBINE MADEIRA, THYME AND STOCK in a saucepan over medium heat and cook until reduced by about half. Add the cream and continue to cook until the liquid becomes saucelike. Remove from the heat, beat in the butter and add salt and pepper. Makes 1/2 Cup
