Suggest a better descriptionPlace chicken in large pot. Cover with water to 1 inch cover over chicken. Cook over medium heat 1 1/2 - 2 hours until tender. (Can add celery, onions, carrots, etc when cooking chicken). Cool. Skim fat from broth. Discard skin, remove meat from bone, bit size pieces.
Rolled biscuit (bisquick) (make 2 recipes). Mix 2 1/4 cups bisquick with 2/3 cups milk. Mix with fork. Knead on floured board ten times. Roll 1/4 inch thick. Cut in 1 inch strips.
Put trivet in bottom of large pot. Layer sliced potatoes. Add salt and pepper if wanted. Layer bite sized chicken pieces on top of potatoes. make lattice of biscuit strips. Repeat layers. Do not touch sides of pot.
On top layer put a 1/2 inch potato slice (test peice0.
Pour chicken broth down the side of the pot, even with the top layer.
Cover and cook on medium heat, about 40-45 minutes. Do not remove lid. Every 10 minutes shake pot (in place of stirring). After 40 minutes check test piece - should be soft but not mushy. It's done. Tilt lid to let steam escape.
Serve plain or with molasses to drizzle over individual servings.
Good with corn bread, cole slaw.
Can be made ahead of time and reheated.
The original recipe used 2 pie crusts in place of biscuit dough.
Pot pie can be frozen but the biscuit layers dissolve.
