Malai Kofta - One of the most sumptuous dishes of North India. It goes well with Lachha Parathas, Butter Naans or Jeera Rice.
This dish has been my top favorite since childhood.
For Gravy:
Take the Olive Oil in a pan and heat it. Once slightly hot, add cloves, cardamom, cinnamon stick and onion. Cook till onion become slightly brown and fully cooked.
Now add turmeric powder, coriander powder and sabzi powder on the onion and red-chilli powder on the extra oil in the pan. Now add in tomatoes and cashews. Cook it with the lid on with constant stirring.
When the tomatoes get cooked, become mashy and oil starts separating, add cream to the mixture. Stir well and cover it for 2 minutes.
Finally add salt and crushed kasori methi and let the mixture cool down.
Once the gravy has cooled, grind it to make a smooth paste. And then heat it to make the gravy warm again.
For Koftas:
Take grated paneer and mash the boiled potato in it. Add sliced cashews, sliced almonds and golden raisins next. Then salt. Now add ararot powder to it for binding. Now fry them immediately in heated oil.
Make sure you get a rich golden color for the koftas.
For Serving:
Take a nice serving place and add gravy to it. Keep koftas on the gravy and garnish it with cream and sliced almonds.
1. Keep the oil on heat for frying when you start preparing for the koftas. So that you can immediately fry them before they loose water and become soggy.
