German Hot Pretzels and Cheese Sauce
8-12 HOURS BEFORE:
1. Dissolve the yeast in water and let sit for 15 min
2. Put yeast mixture, brown sugar, and salt into the bowl of food processor. Pulse a few time to mix thoroughly
3. Add flour gradually while processing until a smooth, even dough forms.
4. Take out of the dough and let it rest in an oiled bowl, covered with plastic wrap, overnight (8-12 hours) in the refridgerator
PRETZELPOCALYPSE
1. Divide dough into either 6 or 12 pieces, depending on how big you'd like the pretzels.
2. Roll each piece out to a thickness slightly larger than a pencil. Form into a pretzel shape.
3. Rest pretzels under plastic wrap at least 45 min to rise further.
4. Preheat grill or oven to 450 degrees.
5. Combine baking soda with the hot water in a shallow bowl and mix well.
6. Dip pretzels in the soda and water solution, shaking off the excess, and place them on a greased or mat-lined baking sheet.
7. Beat a teaspoon of water with the egg yolk to create an egg wash, and brush on to tops of pretzels. Add salt to tops and grill/bake for 12-15 minutes, or until golden brown, while you make cheese sauce (or open the cheese sauce can).
8. Open a beer, grab pretzel, mustard, and cheese. EAT!
