In heavy 2 quart pan, with wire whisk or fork, beast mil, egg yolks, salt and 1/2 cup sugar until well blended. Evenly sprinkle gelatin over mixture. Over medium-low heat, cook, stirring constantly, until gelatin is completely dissolved and mixture thickens and coats a spoon -- about 10 minutes. Stir in vanilla.
Pour 1/2 yolk mixture into medium bowl and stir in cocoa until smooth. Cover and refrigerate both mixtures until they mound slightly when dropped from a spoon - about 30 minutes.
In small bowl with mixer at high speed, beat egg whites to soft peaks. At high speed, beat in 1/2 cup sugar, 2 tablespoons at a time, beating well after each addition. Whites should be stiff and glossy. With rubber spatula, fold in half egg whiles into chocolate mixture and fold the rest of egg whites into vanilla mixture. Spoon mixtures into 6 ounce white glasses alternating chocolate and vanilla. Cover and refrigerate until set - about 1 hour.
