Lightly pulse tomatoes in food processor until blended but with small chunks.
Heat olive oil in non-stick pan over medium heat. Add the garlic and saute until it begins to turn light brown, stirring constantly.
Stir in tomatoes, basil, cheese, salt and pepper. Cover and simmer for 1 hour or more stirring occasionally. Add water as necessary. Add sugar as needed too. Continue to simmer until all flavors are blended well - approx 1-2 hours. Serve with pasta or garlic bread.
