in a heavy bottom pot melt butter over med. heat saute onions, and shallots until soft 4-6 min. add minced garlic and red bell pepper cook another 3-4 min. degalze with white wine reduce by 1/2 crush tomatoes by hand and add to pot cook 15 min. cool and put into food processor until smooth remove the solids, I use a wire mesh strainer and a spatula if I had a chinois I would use it sauce will be thin re warm and add the cheese to thicken if you cook your pasta aldente and finish with the sauce in the pan it comes out perfect enjoy.
