Suggest a better description1. Grease an 8" baking dish with coconut oil, line with parchment so that it comes up the sides, and dust the parchment with a thin layer of arrowroot powder
2. Place 1/2 cup of the water into the bowl of a stand mixer, then sprinkle the gelatin evenly over the water. Set aside to let gelatin bloom
3. Combine remaining 1/2 cup of water, honey, and maple syrup in a medium sauce pan. Bring the mixture to a boil over medium high heat.
4. Place a candy thermometer into the mixture and continue to boil until it reaches 240 degrees. This will take about 12-15 minutes
5. Secure the bowl to the stand mixer fitted with the whisk attachment. With the mixer running at medium low speed, pour the hot syrup into the bowl in a slow. ,steady stream. Be sure it melts all of the gelatin mixture. Turn the speed up to high and continue whipping until the mixture becomes thick and triples in volume, about 5-7 minutes (longer if using hand mixer). Beat in the vanilla til just combined.
6. Pour the marshmallow creme into the prepared pan and quickly smooth the top with an offset spatula. Dust with another thin layer of arrowroot powder.
7. Allow to cure for at least 4 hours, If leaving overnight, cover with a tea towel.
8. Once set, lift the marshmallows from the pan, dip a sharp knife into more arrowroot powder, and cut into squares.
9. Toss with more arrowroot so they don't stick.
10. Store in an airtight container for 1 day, or freeze for one month.
