Brownies:
Melt chocolate chips and set aside. In the bowl of an electric mixer, using a paddle attachment, cream butter and sugar together until light and fluffy.
Sift dry ingredients and add to the butter mixture. Stop the machine and scrape sides and bottom of the bowl. Continue mixing until thoroughly combined.
Slowly add eggs to mixture and blend completely.
Whisk chocolate until smooth and add to butter mixture on low speed. Finish combining chocolate by hand.
Grease the bottom of 2 half sheet (15 by 18-inch) trays and line with parchment paper.
Distribute the brownie mix evenly between the trays and level the tops to the sides with a bent arm metal spatula. Place the trays on the top rack of the oven and bake until the centers are firm - approximately 25 minutes. Rotate the trays in the midst of baking.
Remove the trays from the oven to cool completely.
Invert the brownies onto the back of another tray. Cut the brownies into 1/4 inch pieces. Refrigerate cut brownies until ready to assemble pudding.
Pudding Mix:
In a medium saucepan, heat milk until tepid.
Separate eggs and put yolks into a large stainless steel bowl.
Freeze whites and save for other uses. Add sugar to the yolks and mix thoroughly. Transfer half of the warm milk to the egg mixture and stir thoroughly. Add the remaining milk and stir. Place the bowl over a pot of boiling water. Cook the custard until thick, approximately 45 minutes. Replenish the water
in the pot as needed.
Remove the bowl of custard from the pot and place on a leveled table. Add the chocolate and blend.
Mix the instant pudding into chocolate mixture and whisk until
thoroughly blended. Strain.
Assembly :
In a medium size Pyrex dish evenly distribute 1/2 tray of cut brownies in the bottom. Pour 1/2 of the pudding mix over the cut brownies in the dish. Cut the mixture with the brownies, using a wide metal scraper. Continue filling pan with the remaining brownies. Press the brownie pieces into the chocolate mixture. If the pudding is loose, add more brownies.
Finish the pudding by drizzling the remainder of chocolate pudding mix over the top of the pan of cut brownies.
Tap the pan to distribute the pudding evenly. Clean sides of pan. Let pudding set for 1 hour.
