Set the stick of butter out to soften.
While the water is coming to a boil, peel the potatoes and quarter them. When the water is at a rolling boil, add the potatoes and bring the temperature down to a medium boil. Boil the potatoes for 15min then drain and place in a mixing bowl. Cover the mixing bowl with a kitchen towel and let stand for 10min.
Mash the potatoes through a Potato Ricer into a clean bowl. Add the room temperature butter and fold together with a spatula. Fold in the salt and pepper to taste.
