1. Scrub and peel potatoes and place in a large pot
2. Cover with cold water and add salt (about 1 tablespoon for 16 cups of water) and bay leaf (optional)
3. Cover and boil for about 20 minutes or until fork-tender
4. Drain, remove bay leaf and return potatoes to pot over low heat for 30 seconds to evaporate excess moisture
Mashed Potatoes:
1. In pot, mash together potatoes, buttermilk (or milk), butter, salt, and pepper until smooth
