Although this is a classic recipe for mashed potatoes, it can be used for root vegetables and other tubers or a combination of them.
Half fill a medium-sized saucepan with water. Heat the water to boiling. In the meantime, peel and wash the potatoes. Cut them into small pieces. When the water is boiling rapidly, add the potatoes. Allow them to boil for about 20 minutes, until they are soft. Use a colander to drain the potatoes, then put them back into the saucepan. Add the butter and milk to the potatoes and mash with a potato masher or fork until the potatoes are smooth and soft. Season with salt and pepper to taste
