from What's Cooking: Chicken
1. Cut six pieces of foil each about 10 inches square. Brush the foil squares lightly with oil and set aside until required.
2. With a sharp knife, slash each chicken breast at intervals, then slice the mozzarella cheese and place between the cuts in the chicken.
3. Divide the zucchini and tomatoes between the pieces of foil and sprinkle with black pepper. Tear or roughly chop the basil or oregano leaves and scatter them over the vegetables in each foil packet.
4. Place the chicken on top of each pile of vegetables, then wrap in foil to enclose the chicken and vegetables, tucking in the ends.
5. Place the foil packets on a cookie sheet and bake in a preheated oven at 400 degrees for about 30 minutes.
6. To serve, unwrap each foil packet and serve with rice or pasta.
Tip: Put the ingredients on the shiny side of the foil.
